What is LM VEGAN FITNESS? It’s much more than me sharing meal ideas and recipes with people who are already vegan, plant based, simply curious and stuck on inspiration for meal and recipes on a vegan/plant based diet.

Having deciding 6months or so to be on a plant based diet after being a carnivore for almost all of my existence, I truly struggled for the first month with meal ideas and recipes. I mean cooking was never the problem, I’ve always loved and enjoyed it. I found adjusting my ingredients and recipes for vegan alternatives and protein source was the hard part.

LM VEGAN FITNESS is simply passion for food and fitness, I didn’t start this to ram veganism or fitness down anyone’s throat but to share, inspire and be inspired by like mind people, so LM VEGAN FITNESS is you the vegan, plant based or curious person, so leave the politics at the door.

I use ingredients you can find in all stores so you don’t need to struggle about where to go to find them, these are all affordable and suit all budget needs.

How does LM VEGAN FITNESS fit into your life? Not only do I get to share my passions with you all but soon you’ll be able to enjoy specifically designed meal plans.

Dinner time! 🥧 nothing warms up evenings like a filling slice of pie! Now it was touch and go with how this would turn out😂! Fill me up tofu and broccoli pie🙃 ps both pie and filling can be used to make a quiche🤫 just remove the v eggs
-150g pastry flour
-150g buckwheat Flour
-75g water
-2Tbsp sunflower oil
-pinch salt

-6broccoli florets(sliced)
-3large chestnuts Mushrooms (sliced not minced)
-1baking potato(cut into small cubes)
-300g tofu
-1Tsp salt
-1Vegan egg
-handful kale

Morning!! Right let’s start the day with a smile🤣 & fluffly high protein tofu pancakes! 🥞🥞That’s right tofu pancakes🤪🤯so next time someone tells you vegans can’t have protein pancakes you can tell them otherwise😏…ps this makes 8-10 Pancakes 🤙🏾
-200g firm tofu (350g silken if not or more just adjust your almond milk)
-2Tsp vanilla extract
-2Tsp lemon juice
-400ml unsweetened almond milk
-1Tbsp vegetable oil
-250g buckwheat flour
-150g dates
-1½ cinnamon
-1Tsp gluten-free baking powder
Toppings: crunchy peanut butter, strawberries, blueberries, 1Tbsp maple syrup, crumb is blended flax and pumpkin seeds

Dinner time guys😌 you can take the girl out of the “saff” but she’s always going to love abit of pie & mash!💃🏾, So good the boy(carnivore) had a portion🧟‍♀️🤺 guys this is so filling you won’t need side vegetables.
For one portion:
-2baking potatoes (one small)
-1/4 brown onion (because they’re really big)
-3Tbsp vegetable gravy
-1vegan beef pie (Linda McCartney)
-100g unsweetened almond milk
-Salt & pepper

Tonight’s highlight of my dinner!! Now if you haven’t tried making breaded tofu, I highly recommend 😍 this works well for a delicious snack!
-1/2 block firm tofu
-1/4 cup bread crumbs
-2Tbsp cornstarch
-3Tbsp water
-1Tps salt
-1Tps chilli (flakes optional) or any herbs/spices of choice
-1Tsp natural coconut oil (for frying/line baking sheet)

Hump Day! I slept like a baby and woke up feeling super refreshed and feeling fruity🥝🍈🍍starting the day with a tropical twist overnight💃🏾Overnight blueberry and oats porridge.
