Evening! Another weekend over👎🏾this week’s meal prep ready! I was feeling experimental and bought some vegan quorn, I’ve tried any quorn products so wasn’t sure how it would turn out🤷🏾‍♀️ personally I’ll stick to tofu & rehydrated soya going forward🤫, looking forward to eating all this🤤..279g carbs, 135g protein, 40g fat!💪🏾🤯….yep🐒
-150g quinoa & bulgur wheat mix -1 vegetable stock cube
-2 Cloves Garlic
-1L water
-1 brown onion
-1/2 butternut (cuite)
-100g edamame soya beans
-100g garden peas
-100g trimmed beans
-480g chickpeas
-150g watercress, spinach & rocket
-280g vegan quorn bbq strips
-200g mini Portobello mushrooms

Sunday’s for me are spent meal prepping for the week ahead, i know it takes a while but doing this frees up so much time and hassle for the rest of your week.

My easy vegan recipes should help to make this easier for you…so don’t view this as a core by making it fun and add your favourite ingredients to your own.
