Post gym vegan sandwich recipe

Lunch time 🥪🥑 post gym goodness 😍😋 so lovely and sunny out! This was needed! Feel like I was in serious beast mode💪🏾😏, how has your weekend been?
Lunch time 🥪 happy Sunday lovers! I hope you guys have had a good weekend! Dry Jan is over so I’m sure there are a few sore heads this afternoon👀 lol mine included!! 🤦🏾‍♀️🤫So this roast beef and avo sandwich was a godsend😋 that required minimal effort 😂
-2slices super seedy bread (toasted)
-150g tofu
-1Tbsp Cajun seasoning
-1/2 small avocado
-1/2 small red onion
-100g mini Portabella mushrooms
-salt & pepper

This easy vegan sandwich recipe is such a winner! so easy to create and packed with much needed vegan protein and good fats!

Stack this sandwich with more if you like, for me this was a great portion for my post workout fest.
