Lunch time!! Yaay, ahh so excited for today’s Moroccan meatballs!. I kid you not it was a bloody long food prep to make these balls lol! Either that or I was really hungry last night and eating my dinner at 8:30 just doesn’t go down well with me lol…anywhoo 😝 there you have it! Oh ps mixture made meat 20balls
-1Medium brown onion
-3Garlic cloves
-1Medium carrot
-4Portobello mushrooms
-1Tsp paprika
-1Tsp smoked paprika
-2Tsp coriander powder (1 ½ Tbsp finely chopped works also)
-1/2 Tsp cumin
-1/2 Tsp ground tumeric
-1Red chilli
-2Tbsp tomato paste (3Tbsp tomato pasta sauce)
-2 ½ Tbsp dried fruit mix sultanas, raisins, currants and candied citrus peel. (4 dried apricots finely chopped work better)
-1Can chickpeas (raised and rinsed)
-Zest small lemon
-5g walnuts
-2Tbsp parsley
-Salt & pepper

Servings: 100g Brown rice, 1tbsp chopped almonds, lemon wedge, 4Tbsp tomato sauce
