Dinner🍲 it’s Friday💃🏾, the first week at work is over hopefully you have adjusted okay, simply because I love pizza and Indian food instead of having a cheat meal I decided make a healthier alternative 🤷🏾‍♀️worth it! Guilt free potato and black turtle bean curry💁🏾‍♀️🤭🤫 have a good Friday 🐒 also the other half of my potato I oven baked in smoked paprika but this was too filling I’ve set them aside for leftovers 😂
-1/2 baking potato
-100g basmati rice
-3handfuls baby spinach
-30g black turtle beans
-3Garlic cloves
-150g unsweetened almond milk(coconut milk)
-4mini portobello Mushrooms
-2Tbsp garam masala
-1Tbsp mild madras
-1/2Tsp ground cumin
-Pinch salt & pepper

Toppings: vine tomatoes (slightly roasted), simply soy unsweetened yogurt, sprinkle chia seeds
