Morning!! Right let’s start the day with a smile🤣 & fluffly high protein tofu pancakes! 🥞🥞That’s right tofu pancakes🤪🤯so next time someone tells you vegans can’t have protein pancakes you can tell them otherwise😏…ps this makes 8-10 Pancakes 🤙🏾
-200g firm tofu (350g silken if not or more just adjust your almond milk)
-2Tsp vanilla extract
-2Tsp lemon juice
-400ml unsweetened almond milk
-1Tbsp vegetable oil
-250g buckwheat flour
-150g dates
-1½ cinnamon
-1Tsp gluten-free baking powder
Toppings: crunchy peanut butter, strawberries, blueberries, 1Tbsp maple syrup, crumb is blended flax and pumpkin seeds
