Me and my balls are back #bakefree #energyballs I was able to make 18 balls but you can size to your liking. These are not only healthy but very delicious
-1 1/2cups shredded coconut, divided
-1/2 cup rolled oats
-1 punnet of small strawberries/larger ones for a richer strawberry flavour and shade
-1/2 cup almonds
-6 pitted dates
Add ¾ cup of shredded coconut & remaining ingredients (strawberries, oats, almonds, dates) to the food processor until smooth/completely incorporated.
- Scoop out 1 tablespoon of the mixture and roll it into a ball. Roll the ball into the shredded coconut. Place on plate/baking sheet covered plate/tray. Repeat with the remaining strawberry mixture.
- Refrigerate for 2 hours minimum before serving. Keep in a airtight container in the refrigerator or freezer until needed
